The origin of Minchew/Minshew is English. It's a variant of Minshull which comes from the placenames Church Minshull and Minshull Vernon in Cheshire, recorded as Munschulf in medieval documents. The place-name probably derives from the Old English personal name Mann, Monn + Old English scylfe ‘shelf, ledge’.

You'll find the origin of Minchew in The Oxford Dictionary of Family Names in Britain and Ireland (OUP, 2016). You can also trace Minchew back to Minshew at tinyurl.com/y9782gj2 and thence to Minshull at tinyurl.com/y89lpkcw.
