I am told that the name BEETHOVEN means "beetfield". The name is Flemish-Dutch, and I find many names of HOVEN but I cannot find the meaning of HOVEN.

The BEET part is correct, and HOVEN is related to
German
"Hof" (in this case: farm). So BEETHOVEN was the name for someone from a beetroot farm. Or else from a place called B. in Flandria.
This is taken from Familiennamen (Dudenverlag 2000)
