I, too, am reminded of caramel, and when I was growing up, one of my elementary school teachers spelled caramel as carmel phonetically as she pronounced it (oh, the wonders of the school systems). I think it's too girly, along with Carmella, and I find Carmen not feminine enough. I know a woman named Carmelina, but she only goes by Carm.
