Wow, that's a lot of names :p I'll just comment on my favourites.
Evening Rae - I've become very used to this as your daughter now, I hope you use it eventually! I love the nn Evey.
Edmond Aquinas - I love Edmond and Aquinas has a good sound and namesake.
Nathaniel Aquinas - I love Nathaniel nn Nat.
Katharine Clare - Love nn Kitty and Clare is wonderful ;)
Simon Zacchaeus - I always said za-KAY-us, and it's proving a bit hard to change, but this combo looks fabulous. I really like Simon.
If I had to choose from yours, I 'd go with...
DS / DS: Nathaniel Joachim / Edmond Aquinas
DD / DD: Evening Rae / Katharine Clare
DS / DD: Nathaniel Aquinas / Evening Rae
