I adore nn Evie, and I like Evelyn for it's sake. :) Evelyn is very classy and I don't think it will become too popular anytime soon, at least in the U.S. Of course, that does depend on your definition of "too popular," as it is rising steadily. Alice is ok, but not a personal favorite. I love Caroline, but I don't really care for Carolyn at all. It sounds a bit too dated.
Your existing combos are quite nice. I like Alice Elaine, Carolyn Rose, and love Evelyn Maeve. Beautiful, though I like the honoring on the other names. A few other pretty and classic, but not too frilly middle names that you might like:
