I'm a bit confused. Do we get more grandchildren this round?
Last round I got three male grandchildren so I assigned them all to parents in that round. Is that what is supposed to be done?
And then for this round, do I get three boys again since I did last time?

Yep, you did it right last round. This round, you answer the new grandchildren question to see how many grandchildren you receive. You can choose the genders and assign them to whoever you want.
