To me Eliza has the interesting distinction of feeling like both a country bumpkin sort and an upper-crust wannabe name. I like a wide variety of Elizabeth's spawn (Betsy, Lisbeth, Lies, Bethan, Eliso, on and on), but Eliza just never appealed to me. I think it has a crass and brassy feel.
I'd pair it with a softer middle name. Eliza Delphine is my favorite from you list. Offhand I'd also create Eliza Josephine, Eliza Catherine, Eliza Meredith, Eliza Philomel, or Eliza Bethany --though why bother with that if you don't like Elizabeth? :-)
