I think Coe is totally workable for Claudie, and since it's on your short list about half the time I would definitely go with that.
Honestly I think it works with all of those names except Caristiona, but I have very liberal nickname policies. Another option is Nicolette. Umm. I think it would work with Caroline. Possibly Victoria.
I think it is probably important to note that if you had a daughter Coe you would DEFINITELY call her Co-co a lot of the time.
