Stefica is really great, but it would probably be hard to get people to associate the spelling with the original pronunciation you described. I love the sound of Stefania.

I had a friend from Ukraine named Stepan; it took a while for me to get used to, but now I think it sounds cool.

All the people mentioned are Croats.
I don't think Darinka is a diminutive (at least not in Croatian), but an elaboration.
