I have a soft spot for Joseph because it was my father's name, although he always went by a totally unrelated nickname. I don't care for Joey or Joe, however. I would try to call him Joseph--it's not long or difficult to say, so I think it would work as an every day moniker.
I'm not sure how I would feel about it if it hadn't been my dad's name. Even so, I don't like it quite enough to use as a first name, though if I'd ever had a second son, I would have given him the middle name Joseph after my father.

I'd probably use Joey as more of a "pet name" than a true nickname. I prefer full names most the time. Hearing Joseph rather than Joe is rather refreshing.
