I learn to my surprise that there's a town in Italy called Stablum. It's in the Trento region though I can't find it on a map or in a gazetteer. The surname in Italy is found mainly in the Trento region. The name doesn't look Italian, perhaps it's Ladin, that minority language of the Dolomites.

All I can think of is the Latin word "stabulum" (stable, camp)

That's a likely source. I wondered why it wasn't italianised, becoming something like Stabolo or Stabio. That led to the possibility that it is Ladin in origin.

Do you know, how old the town is?

I haven't a clue. I believe it's in the vicinity of the town of Male' which is said to be "of Roman origins".
