I dislike Hulda--strongly--but if you and your husband both wanted it, I wouldn't see anything objectionable about using it as a middle name. Personal meaning should trump prettiness and flow, at least for middle names, and with a knockout first name like Katarina, having Hulda hidden away in the middle wouldn't hurt any girl.
It's all moot, though, since your husband's not on board. I don't think Hulda's worth fighting for, so if I were in your shoes, I'd simply pass Hulda's memory down to her great-great-grandchildren and not worry about passing down her name.
