I feel like it's one of those names I can appreciate more when I isolate it from its societal context. It's pretty decent sound-wise but has become totally bleh to me due to its popularity in my age group. I can see it having a resurgence in popularity in about 50 years, much as a lot of 'old lady' names are having now.
I think something with a similar feel, like Bramble or Ambra (okay I made that one up) would be neat to see used in real life.
If I were forced to name a daughter Amber I'd give her a zesty middle name like Amber Ophelia or Amber Celestia.
