No clue about trendy Latino naming habits, but in some South African circles it's quite usual to merge names together, especially if the alternative is using family names and ending up with numerous identically-named cousins.
One of the more startling mergers is Jacobeth - Jacoba + Elisabeth. And quite the worst was when I assumed that a colleague whose name sounded like Suzette was actually named Suzette. She wasn't. She was Suseth.
Joseth, therefore, would make sense to me as Josephine + Elizabeth. If I encountered it on a boy, I'd assume it was a typo for Joseph!
