Thomas is nice, but as you say not particularly exciting.
I think you would struggle to avoid nicknames - you could probably do it when he is a kid if you insist, but as a teenager he might choose to be called Tom or Tommy.
I quite like Tom, but I'm also not a fan of Tommy. Tom seems like the most logical nickname.
Thomas Samuel George is nice. None of the names are particularly spectacular but they make a nice solid, masculine name which will age well.
