I think it could work. I know a Saraphine - she goes by Phina or Fina usually. When she was a kid she went by Sara because her parents wanted to spare her teasing but she preferred the whole name anyway.
Sadie kind've ruins the bold name Seraphina. I mean, if you are going to go with an elaborate name I feel like you should embrace it, not hide it.
Raphi or Rafi might work too.
Sina (zeena) would be cute as well, and a legitimate nickname.
