I think any of them would go okay with Amy and Thomas, though I really dislike Stanley, and Theo seems a more natural shortening of Theodore to me.

I love Matteo but I don't feel comfortable using it as it's Italian and we have no Italian relations. I love Matteo with all those first names but I don't like using the middle name. My grandmother goes by her middle name and she can't even remember her first name.
Theo is the natural shortening for Theodore, however I know 2/3 Theo's (Just Theo) so I don't want to use it.

Matteo has been semi-popular recently in several countries. None of the younger Matteo "Teo"s I've met or heard about were Italian.
...so if you love it, I don't think that's a barrier, at least objectively. Or not much more so than Theodore being Greek would be.

I think to me as I'v heard Theodore/Theo on a lot of kids. I know a lot of names get used out of countries however it's not something I feel comfortable doing.
