Demeter or Ceres - this is hard, I love both. I'm going with Demeter.
Athena or Minerva - Minerva
Artemis or Diana - also love both, Diana is more usable.
Hephaestus or Vulcan - Hephaestus, Vulcan is too obvious.
Hestia or Vesta - Vesta
Eris or Discordia - Discordia is really cool!
Harmonia or Concordia - Concordia is a recent favorite of mine
Persephone or Proserpina - Persephone
Helios or Sol - Sol
Selene or Luna - Selene
Tyche or Fortuna - Fortuna
Pan or Faunus - Pan
Enyo or Bellona - Bellona
Hecate or Trivia - Hecate
Hebe or Juventas - I guess Juventas
Hypnos or Somnus - Somnus but they're both far too obvious
Nike or Victoria - Nike simply because it's a more offbeat choice, I like Victoria as well
Mnemosyne or Moneta - Moneta
Amphitrite or Salacia - Salacia
Boreas or Aquilo - Aquilo
Themis or Justitia - Justitia
Zephyrus or Favonius - Zephyrus
Auster or Notus - Auster
Eurus or Vulturnus - Vulturnus if I absolutelly had to, I dislike both
