It’s not pronounced like in English, but in Denmark, the name Mynte/Mynthe is actually reasonably popular for girls. It’s pronounced with the y like the french u or the german ü. The t/the makes a d sound.
I don’t think it’s any different than using other nature themed words as names, like Ivy, Rose, Juniper, Summer, Autumn og Sky or whatever. It’s not my style but I don’t see any harm either.
