Damnit! I was sure I finally found the name Nono, she was Welsh. The school trip was to Lleda Hall where we stayed for a week and she taught us how to sing Happy Birthday in Welsh because one of our classmates had a birthday during the trip. It could be that her name isn't Welsh at all, though or maybe you're right with her parents not being Welsh. Or I could be misremembering (I was 10 at the time). She WAS an older woman - over 50 I think. She could have actually been May-Fanny now that you mention it...
