I heard the name Lumini today, and was struck by how pretty it is! I only heard it out loud, not written down, so the spelling is assumed but it was pronounced LOO-mi-nee.
What do you think of this name? Does anyone have any idea of its origin or meaning? How do you think it’s most likely to be spelled based on this pronunciation- Lumini, Loumini, Lumeni or something else?

loo-MEE-nee, mostly used as a surname.

In Latin, Lumen means Light. As in, illuminate. Lumini could mean 'for the light' or 'to the light' but it probably wouldn't have: more likely to be used after a verb which requires the Dative rther than the Accusative case.
I wouldn't like to guess how anyone might have decided to spell it!
