I've known people with both these names. I personally prefer Odile, because it sounds more elegant to me. I did have it on my own baby name list and I'm kind of sad I couldn't find a spot for it. Odette is pretty, but I associate it with a children's movie, which is maybe why it feels less mature to me. Both are stunning names.
