I like Katherine, Catherine and Katharine pretty much equally depending on my mood. I LOVE all of them. Katherine/Catherine/Katharine is one of my favourite names.
I like Kate, Kitty and Kat. Kate is my favourite right now because of some awesome Kates in my life (a camp counselor, my three year old cousin, and the infamous shrew). Kitty is not that young in my opinion. I think it's a really fun, kicky sort of name. Very jazz age. I wanted to call my cousin Kate (whose full name is, unfortunatly, Kaitlyn) Kitty for a while, but that didn't work out. Kate suits her better.
If she goes by Katie, as opposed to Kate, your friend's point about Kitty sounding too young is kind of invalid. Katie sounds very childish to me.
