I quite like Amaryllis and I don't think the pronounciation is hard really. I like Amaryllis Gwen, but none of your other combos - many of the names you suggested are too long to go with Amaryllis. I would go for a one or two syllable name so it's not too much.
I don't like Hyacinth at all but if I had to use it I would say it's female.
