I'm no expert, but given other English names with the same components: "lang" Old English (and others) for "long" (probably in reference to a tall person); "ston" meaning "town" or possibly, although I'd guess less likely, from Old English "stan" for "stone".

Stone is the one, according to the experts. The village of Langstone in Devon is suggested as the source, but there's another in Hampshire, of the same name. Perhaps there are others.
