The Oxford Dictionary of Surnames (1997) has:
Willmot, Willmott, Willmett, Willmetts, Willimott and a few others, but not exactly Willmitt.
It explains them as a "hypocoristic of Willelm (William)".
Maybe this is it, I don't know.
