Hudecki is a variant of Chudecki which is derived from chudy 'thin'. Normally, you should be able to see the distribution of Hudecki in Poland at tinyurl.com/2fwghf but something's wrong with the site right now. In Canada, all the Hudeckis are in Ontario as you can see at tinyurl.com/y7ass7mh. For Hudeckis in the US, see tinyurl.com/y946t9q4.
