1) Swedish Olsson (son of Olaf)
2) Norwegian or Danish Olsen (son of Olaf)
3) German Ohlsen (son of Ohl, which is a Low German form of Ulrich)

In sweden it could also mean son of Olof (same name as Olaf but it's pronounced different)
