I can give you several meanings to choose from.
If it came from the 1-b spelling, cob, it could mean: A corncob. A short, thickset horse. A male swan. In this case, it is probably from Low German.
If it was originally spelled cobb, then it's refering to a method of house-construction using mud. A friend of mine lives in a cobb house.
