1) Jellicoe is a variant of Gellicoe, the first element relates to Gelle (Dutch) a short form of Guilielmus (William).

or
2) Jellicoe is a variant of Jolifcock. With Jolif meaning joyous and cock meaning boy?

Any thoughts welcome??

There are other explanations - Jelley, a version of Giles, + cock.
I've also seen it explained as a corruption of Jericho but I'm not sure how seriously we should take that one.
