You're right in that Sorensen means 'son of Soren (Thor)'. But Soerensen or Sørensen is a different name: it means 'son of Søren (Severin)'.

I have allways heard that it was just another way to wright Sören (Søren).

You know I think you're right. Sorensen is not a real Scandinavian surname at all. And Soren is just a corrupted spelling of Søren. Anthony thinks so as well: http://behindthename.com/messages/43472.html
