I believe it is related to Thor, the Norse god of thunder. I found Sören as a Danish variation of the word Thor ...

You're right in that Sorensen means 'son of Soren (Thor)'. But Soerensen or Sørensen is a different name: it means 'son of Søren (Severin)'.
