Not sure about the exact meaning of the Greek endings (someone else, maybe?) ...but these seem rather obvious ...

Theodorakis is from Theodore ...gift of God ...or more exactly God's gift

Andreadis must be from Andreas ...which means "man" ...and denotes manly or masculine. It is related to Andrew.

Nicolaidis must be from Nicholas ...victorious people ...

Theodorakis : the ending "akis" is a diminutive, so Theodorakis means "little Theodore" or, figuratively, "son of Theodore".
Andreadis and Nicolaidis : both "-adis" and "idis" are very typical endings for Greek surnames. Both imply the meaning of "relation" or "related to".
