Kopetzki or Kopizki is Polish. The -ski ending means "from". The stem could be the word kopec´ which means "lampblack, smoke, soot". This might be metonymic for someone working in the mines, i guess, or something with dark skin, but that would be unlikely in Poland. Other possibility is that Kopec or a similar word comes from a placename. There is a Kopec´and Kopice and some Kopiec. Thus someone hailing from these cities.
