There was a contestant on last night's episode of The Crystal Maze with that surname, but I can't find it here. What's its meaning?

Copper here is basically a variant of cooper, barrel maker, and thwaite is clearing, borrowed from Old Norse, with a related OE verb meaning cut. Loss of invoiced th is typical of many names in the Norman period.
