I've never warmed to Eliza because I really don't care for the long 'i' sound, but it's a fine name. Actually, I think it sounds nicer with Saulnier (I'm assuming that Saulnier is French and pr. that way) because Eliza has a 'z' sound while the surname has the 's' sound than Grace Saulnier. The ending of Grace runs right into the surname.
Have you considered Elise which is also French and sounds good with Saulnier? If you pronounced Elise the French way (eh-LEEZ), it would sound good with Saulnier. Of course, if you pronounced it the way most Americans do (a-LEES), you'd have the same situation as Grace Saulnier.
