I think Margherita is lovely, but Margarita, though a pretty and legitimate name, is too reminiscent of frosty tequila-laden beverages for me actually to use on a human. Rita is a fine nickname for either, and I'd rather see it used as a nickname than as a full name; there's not much to it on its own.
