Definitely Catherine--it's a striking name with so much history.
Catherine May is a great combo and I'm so glad you're not considering Kate or Katie...blech, the world has enough of them. Kay is nice but I'd only use it if you choose the K spelling. WDYTO Cat, Catt, Caja / Kaja, and Katja?
