Apple isn't my cup of tea (no pun intended), but I enjoy a challenge. Marie seems too pedestrian next to Apple. A variant of your mn might work:
Apple Mariah
Apple Maureen
Apple Maren
Apple Mariska
Apple Molly
Hmmmm. Maybe not. Apple Molly sounds as if she wheels her cart full of apples through the town crying, "One a penny, two a penny . . . Who'll buy my apples?" Why is Apple Annie coming to mind? Is that a character in a movie somewhere? Anyway, here are a few more you might like:
Apple Butter (just kidding)
Apple Emily
Apple Sylvie
Apple Justine
Apple Miranda
Apple Elena
Apple Vivien
Apple Viveca / Viveka
Apple Kirsten ("KEER-sten")

And I agree with you on avoiding a mn that is also a noun. That would be over the top. Good luck!
P.S. Since Apple is such a controversial name, perhaps you could make it a nn for something else. Then she's have options if she didn't like it. I'm not sure what if could be short for, maybe Apollonia, or Aphrodite, Aphra, April, Polaire / Polaris, Polly, Apollinariya / Apollinaria, Apolline? Then again, my father used to call me Tiggers, which has nothing to do with my given name. Nns are supposed to be repositories of all the love and affection you can muster. Just some thoughts.
