Mei would be MEY (but said really fast) and Chen would be CHEN (but really fast as well). Mei Chen sounds a bit odd together in my opinion. I would suggest a name with a softer beginning sound than Chen to go after Mei.

The thing with names in China is that there is no such thing as a popular combo. Every parent choses a name for their child, without it really being a name. It's like every time a child gets named a new name gets invented, so every Chinese character can serve as a name. I hope that makes sense... Anyway, back to Mei, I think Ya would work, Li as well, Ah not so much. Some possible combos:
Mei Lan (LAHN)
Mei Xu (SHOO)
Mei Fen
Mei Jiang (JYAHNG)
Mei Wen
Mei Xue (SHWEH)
