Only if you intend on prn it hair-ee-EHT. Whenever I see a name ending in -ette I assume the emphasis falls on the last syllable and it irritates me when it doesn't.
I don't really like either name but Harriette (hair-ee-EHT) sounds more feminine than Harriet so I'l go with the former.
