I prefer Caroline, but Carolina is lovely too. Pronunciation would be problematic, as I think most Americans would have a tendency to pronounce it like the states. She would forever be correcting people. But I suppose if she were going to go by Callie anyway, it wouldn't matter. I think, though, that Caroline goes better with Isaac than Carolina.
