Oh, definitely Sylvia Plath for a girl (though I'm not sure how my child would feel about this association). I love her and her writing very much.
For a boy, I'd have to say either Robert Francis Kennedy or Dylan Marlais Thomas (I would totally use Marlais as a middle name).

For a girl, I think I'd pick an inspirational figure from the sciences or technology, maybe Ada Lovelace, Marie Curie, Gertrude Belle Elion, Virginia Apgar, or Hypatia of Alexandria.
I don't know who I'd pick for a boy. Perhaps an author or philosopher who has influenced me.
