Offhand, I'm inclined to pronounce it tuh-REEK. Personally, if I were going to pronounce it the other way, I would say TA-rik ("ta" like in "tax"), not tear-ick as in rhyming with Eric. Though I realize that's just me, and it depends on the person. Like how some say Sair-ah instead of Sarah.
In any case, if I were saying tuh-REEK, I would use Tarik. If TA-rik, I guess Tarek or Tarrick. It depends on the kind of "feel" I'm looking for. If I wanted it to look more anglicized, I'd go with Tarrick, but if I were into something exotic I would spell it Tarek. Other than that I feel the same way about both.
If it absolutely has to rhyme with Eric, however, I think Terrick is best because otherwise some people will be saying TA-rik. In and of itself though the spelling Terrick doesn't have as much aesthetic appeal as the others.
