Fantastic selection! Some really interesting names in there. Peewee & Edward Cullen made me laugh.
Estíbaliz is Basque. There's a village with a 12th-century church dedicated to the BVM: http://www.spain.info/en/conoce/monumentos/alava/iglesia_de_santa_maria_de_estibaliz.html
and a well-known singer who's been around since the 70s: http://en.wikipedia.org/wiki/Est%C3%ADbaliz_Uranga
Most common meaning given (in English and Spanish anyway) seems to be 'sweet like honey'. No idea if this is accurate.
Amancaya: apparently "The word 'amancaya' is the native Indian name of a flower of the Andes' - spotted on a site selling Argentinian wine, sounds plausible.
