My best friend is Eve "Evie", she's always used Evie as a nickname because it ends in a vowel and therefore carries despite the fact it is longer.
I have heard Genevieve "Eve" lots and lots of times so i don't think it is a stretch but I personally dislike it. The way I pronounce Guinevere doesn't result in Eve so that would be a stretch. If a full name is to be used I'd go with good ol' Evelyn, though I like Eve on it's own. :)
