If you had to choose, which one and why? Holly, I think it's prettier and sounds more grown up.
Do they give you different images? Would the parents of a Holly be different than those of a Jade? I don't know, I think I would expect Jade's siblings to be more trendy, where as Holly would have siblings like Madeline and Jonathan.
Would you only use Holly during the Christmas/winter period? No, it's fine. I also wouldn't only use June for a baby born in June.
