Could it have been an abbreviation for "male" if the baby was unnamed at the time of the notation?
The "name" M actually appears in the girls' list. As Higuma mentioned, this is likely an abbreviation for Mary, Maria or Marie. J appears on the boys' list (for John/Jean perhaps).

I wonder if it has to do with girls being named Maria/Marie, from the French Catholic population. I've seen many Maria's in my family tree labelled as just 'M.__'.
