"Julienne" is both a noun and a verb. The verb, as you say, is the act of cutting things into matchsticks; but the noun can be applied to anything that has been julienned. Hence, Potatoes Julienne, Carrots Julienne, Celery Julienne, etc etc.www.answers.com/julienne
