I adore Inez, and I don't mind it on a girl not of Spanish origin as the first Inez I met was Australian-of-English-origin (she had been named Kate as a baby but hated being one of dozens of Kates as a child, so she changed to Inez when she started high school).
I don't know if I'd ever be brave enough to use Inez, but I'd love to see it on someone else's child.
Pilar is a little harder to imagine, as it's similar to the word pillar, and also reminds me of pilaf, a type of rice dish. But I wouldn't cringe at it.
